You are burning fat continuously anyway, only the amount varies. If you run on empty stomach, you just burn the glycogen reserves instead of blood sugar as a primary energy source, that's all. Why don't you directly go for a heart rate monitor instead of a simple wristwatch? As for undershirts, try to use function cloth if possible and not cotton stuff. Cotton soaks in sweat.
